To create Añejo, Espolòn uses only mineral-rich water drawn from the natural well beneath the distillery. The 100% Blue Weber agave is hand-harvested and slowly steam-cooked in custom-made stainless-steel autoclaves before fermentation begins. One of Cirilo Oropeza’s signature traditions lives on as classical music fills the fermentation room—a ritual he believed inspired the yeast through the vibrations of the sound. The tequila is then double distilled using a combination of column and pot stills to create a smooth, balanced profile. Finally, the tequila is aged for at least 11 months in new American oak barrels and finished for at least one month in ex-bourbon barrels, creating a rich, complex character with depth and refinement.

The result is an authentic, medium- to full-bodied Mexican tequila with a bright reddish-gold color and a sophisticated flavor profile. Espolòn Añejo delivers a complex balance of roasted agave and oak, layered with notes of dried fruit, butterscotch, and warm spice.

 Espolòn Añejo is bottled in the brand’s signature bottle, inspired by traditional Mexican milk bottles, and finished with label artwork influenced by the iconic prints of José Guadalupe Posada—a tribute to the creativity, culture, and craftsmanship that define the brand.
